chipotle eggs benny

Ingredients (4 servings)

Hollandaise:

  • 2 egg yolks

  • 2 tbsp butter

  • 2 tbsp water

  • ½ - ¾ tsp ground chipotle chili pepper

  • ½ -1 tbsp lime juice

  • A pinch of salt

Eggs:

  • 4 eggs

(white vinegar for poaching)

Sweet Potato Hash

Instructions:

  • Prepare sweet potatoes and set aside.

  • Fill a pot halfway with water and add a tsp of vinegar.

  • Bring water to a boil, reduce heat to medium-low and carefully crack eggs into the water.

  • Poach for 3-4 minutes and remove with a slotted spoon (I like my eggs a little less runny. If this is you, add 1-2 minutes of cook time).

  • While eggs are cooking, prepare hollandaise.

  • Melt butter in the microwave (15 seconds, stir, 15 second stir - butter should be melted but not hot).

  • Combine egg yolks, water, lime juice and salt to blender or Magic Bullet.

  • Blend until combined, add butter and blend again.

  • Add ground chipotle a little at a time (this should be to taste – chipotle is both smokey and spicy, a little goes a long way).

  • Place poached egg over sweet potatoes hash and top with hollandaise.

  • Sprinkle with paprika and enjoy!

Tips:

  • Layer sliced avocado beneath the poached egg and top with cilantro.
