chipotle eggs benny
Ingredients (4 servings)
Hollandaise:
2 egg yolks
2 tbsp butter
2 tbsp water
½ - ¾ tsp ground chipotle chili pepper
½ -1 tbsp lime juice
A pinch of salt
Eggs:
4 eggs
(white vinegar for poaching)
Instructions:
Prepare sweet potatoes and set aside.
Fill a pot halfway with water and add a tsp of vinegar.
Bring water to a boil, reduce heat to medium-low and carefully crack eggs into the water.
Poach for 3-4 minutes and remove with a slotted spoon (I like my eggs a little less runny. If this is you, add 1-2 minutes of cook time).
While eggs are cooking, prepare hollandaise.
Melt butter in the microwave (15 seconds, stir, 15 second stir - butter should be melted but not hot).
Combine egg yolks, water, lime juice and salt to blender or Magic Bullet.
Blend until combined, add butter and blend again.
Add ground chipotle a little at a time (this should be to taste – chipotle is both smokey and spicy, a little goes a long way).
Place poached egg over sweet potatoes hash and top with hollandaise.
Sprinkle with paprika and enjoy!
Tips:
Layer sliced avocado beneath the poached egg and top with cilantro.
Add chorizo and cheddar cheese for a hearty meal.
