sweet potato hash

Complete transparency here, I stole this recipe from my best friend’s husband, and these potatoes have become a staple in our house. This is our go-to substitute for traditional hash browns, roasted potatoes and french fries.

Ingredients (4 servings):

  • 1 tbsp olive oil

  • 2 sweet potatoes

  • Garlic powder

  • Onion powder

  • Paprika

  • Pink Himalayan sea salt

  • Fresh ground pepper

    optional:

  • Dash of cinnamon

Instructions:

  • Cube sweet potatoes (½ in x ½ in).

  • Heat olive oil in large pan over medium heat.

  • Add sweet potatoes and season generously (sprinkle each spice over the potatoes, once or twice over).

  • Brown for 3-4 minutes, per side, seasoning once more (8-10 minutes in total).

  • Seasoning will create a crispy layer on potatoes.

Tips:

  • These potatoes make a great addition to any meal! Enjoy with eggs for breakfast or as a side for your favorite burger.

  • Serve with a spicy aioli or ketchup.

  • Add turkey kielbasa, sautéed bell pepper and onion for an easy dinner.
