sesame bison
Ingredients (4 servings):
1 lb. ground bison
2 tbsp sesame oil (you can substitute for your preferred oil, but the sesame oil really gives this a distinct flavor)
¼ tsp grated ginger
3 cloves garlic (minced)
1/3 c coconut sugar
¼ c low sodium gluten free soy sauce (or coconut aminos)
Red pepper flakes, salt and pepper to taste
1-2 green onions (sliced)
optional (for serving):
Toasted sesame seeds
Spicy mayonnaise (1-2 tbsp mayonnaise for every ½ -1 tsp of siracha)
Instructions:
Heat 1 tbsp of sesame oil over medium heat in a large skillet.
Add ground bison. Season with salt and pepper and brown for about 8 minutes, breaking pieces apart until you can no longer see pink.
Make a small section in the middle of the pan, add ginger and garlic and cook until fragrant (about 1 minute). Stir to incorporate and reduce heat.
In a separate bowl, combine sugar, soy sauce and remaining tablespoon of sesame oil.
Pour mixture over meat and bring to a simmer.
Simmer 3-5 minutes or until sauce has thickened (stirring occasionally to incorporate).
Season with red pepper flakes, salt and pepper to taste (I find that this does not need extra salt).
Remove from heat, top with toasted sesame seeds and green onions and enjoy!
Tips:
Serve over a bed of white rice or in lettuce wraps with spicy mayo.
Add 2 heads of steamed broccoli for a take on the traditional beef and broccoli.
This is great reheated and makes the perfect make-ahead dinner for a busy week.
