pumpkin streusel bread
Ingredients:
Topping:
1/4 c salted butter, cubed at room temperature
1/2 c all-purpose flour
1/4 c coconut sugar
2 tbsp maple sugar
1/2 tsp pumpkin pie spice
Bread:
1 15oz can pumpkin
1 c maple sugar
1/2 c coconut brown sugar
1/2 c olive oil
2 large eggs
1/2 tsp vanilla extract
1/2 c milk
1 3/4 c all-purpose flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp pumpkin pie spice
1/2 tsp salt
Glaze:
1/2 c powdered sugar
1/4 c Stewart’s maple syrup
Instructions:
Preheat oven to 325 degrees F
Line a 9 x 5 loaf pan with parchment (or spray with non-stick spray)
In a small bowl, combine all dry ingredients for bread and stir to combine.
In the bowl of your stand mixer (or a large bowl), whisk pumpkin, sugars, and oil. Add vanilla, milk and eggs (one at a time). Whisk until smooth.
With your mixer on the lowest speed, add dry mixture a 1/4 cup at a time. Mix until well combined.
Pour batter in prepared pan.
Prepare your crumble. Use a fork to combine flour, sugars and butter until a uniform crumble forms (leaving some larger crumbs).
Sprinkle crumble over batter and bake loaf for approximately 75 minutes (check with a toothpick until baked through).
Remove bread from oven and cook on a wire baking rack for 20-30 minutes.
While the bread cools, combine glaze ingredients. When the bread is cool to the touch, drizzle with glaze.
Slice and enjoy!
