cookie pie
Ingredients:
1 cup King Arthur GF Flour (our 1 c traditional flour)
1/2 tsp baking soda
1/8 tsp salt
1/2 c butter or coconut oil (softened but not melted)
1 egg (at room temperature)
1/2 c coconut sugar (or brown sugar)
1/4 c maple sugar (or white sugar)
1 tsp vanilla
1/2 semi-sweet chocolate chips
Instructions:
Preheat oven to 375 degrees F. Spray a 8 in pie plate with cooking spray and set aside.
In a medium bowl, combine flour, baking soda and salt (set aside)
In a mixing bowl, beat butter and sugar together until creamy. Add egg and vanilla and continue to beat until well combined.
Slowly add flour mixture 1/4 cup at a time, until full incorporated.
Using a spatula, mix in 1/4 cup of chocolate chips.
Pour batter into pie plate and use the back of your spatula (or your hands) to spread evenly in your pan.
Top with remaining chocolate chips and bake for 10-20 minutes (edges should begin to brown and crisp, but leave middle a little soft especially if using GF flour)
Remove from oven and allow to cool 15-20 minutes.
Serve warm with your favorite ice cream, and enjoy!
Note: Cooking times may vary based on light/dark pan, bake to your liking.
