cookie pie

Ingredients:

  • 1 cup King Arthur GF Flour (our 1 c traditional flour)

  • 1/2 tsp baking soda

  • 1/8 tsp salt

  • 1/2 c butter or coconut oil (softened but not melted)

  • 1 egg (at room temperature)

  • 1/2 c coconut sugar (or brown sugar)

  • 1/4 c maple sugar (or white sugar)

  • 1 tsp vanilla

  • 1/2 semi-sweet chocolate chips

Instructions:

  • Preheat oven to 375 degrees F. Spray a 8 in pie plate with cooking spray and set aside.

  • In a medium bowl, combine flour, baking soda and salt (set aside)

  • In a mixing bowl, beat butter and sugar together until creamy. Add egg and vanilla and continue to beat until well combined.

  • Slowly add flour mixture 1/4 cup at a time, until full incorporated.

  • Using a spatula, mix in 1/4 cup of chocolate chips.

  • Pour batter into pie plate and use the back of your spatula (or your hands) to spread evenly in your pan.

  • Top with remaining chocolate chips and bake for 10-20 minutes (edges should begin to brown and crisp, but leave middle a little soft especially if using GF flour)

  • Remove from oven and allow to cool 15-20 minutes.

  • Serve warm with your favorite ice cream, and enjoy!

    Note: Cooking times may vary based on light/dark pan, bake to your liking.
