nutella banana french toast

Ingredients (2-3 servings):

  • 2 tbsp butter

  • 8 pieces of bread

  • 2 large bananas

  • 2 eggs

  • 2 tbsp of milk

  • 2 tsp coconut sugar or honey

  • 1/4 tsp cinnamon

  • Splash of vanilla

  • Nutella

Instructions:

  • Cut crust off bread (optional).

  • Use rolling pin (or large can) to roll/flatten each piece of bread.

  • Quarter bananas (lengthwise - you should have 8 quadrants in total).

  • Cover one side of each piece of bread with the desired amount of Nutella.

  • Place one piece of banana at one end of the bread and begin to roll bread around banana.

  • Place seam down and set aside. Repeat until your have 8 roll ups.

  • In a separate bowl, whisk egg, milk, sugar, vanilla, cinnamon and vanilla.

  • Heat butter in griddle over medium heat.

  • Gently dip each roll up in egg mixture, rolling to coat each side.

  • Place roll up on griddle, rotating to brown until golden on each side.

  • Serve with extra banana slices and dust with powdered sugar.

Tips:

  • Slightly stale bread tends to be the best for french toast.

  • You can omit the rolling and build this as a sandwich with Nutella and banana between two slices.

  • You can also used sliced banana bread or peanut butter to vary this recipe.

  • Serve with maple syrup or a Nutella drizzle.
