nutella banana french toast
Ingredients (2-3 servings):
2 tbsp butter
8 pieces of bread
2 large bananas
2 eggs
2 tbsp of milk
2 tsp coconut sugar or honey
1/4 tsp cinnamon
Splash of vanilla
Nutella
Instructions:
Cut crust off bread (optional).
Use rolling pin (or large can) to roll/flatten each piece of bread.
Quarter bananas (lengthwise - you should have 8 quadrants in total).
Cover one side of each piece of bread with the desired amount of Nutella.
Place one piece of banana at one end of the bread and begin to roll bread around banana.
Place seam down and set aside. Repeat until your have 8 roll ups.
In a separate bowl, whisk egg, milk, sugar, vanilla, cinnamon and vanilla.
Heat butter in griddle over medium heat.
Gently dip each roll up in egg mixture, rolling to coat each side.
Place roll up on griddle, rotating to brown until golden on each side.
Serve with extra banana slices and dust with powdered sugar.
Tips:
Slightly stale bread tends to be the best for french toast.
You can omit the rolling and build this as a sandwich with Nutella and banana between two slices.
You can also used sliced banana bread or peanut butter to vary this recipe.
Serve with maple syrup or a Nutella drizzle.
