baked cider donuts

Ingredients:

  • 1 ¾ c flour

  • 1 ¼ tsp baking powder

  • 3/4 tsp salt

  • 2 tsp cinnamon

  • ¾ c butter (salted, at room temperature)

  • ¾ c coconut sugar (or brown sugar)

  • ¼ c Stewart’s maple Syrup

  • ½ c white (or maple) sugar for topping

  • 2 large eggs (at room temperature)

  • 1 tsp vanilla extract

  • 1/3 c warm water + 1 oz Spiced Apple Cider Concentrate (or ½ c apple cider of choice)

 Instructions:

  • Preheat oven to 350⁰F and prepare donut pans by spraying with non-stick baking spray (one 12-donut or two 6-donut pans).

  • Combine flour, baking powder, salt, and 1 teaspoon of cinnamon in a medium bowl. Mix to combine and set aside.

  • In a large bowl or in the bowl of your stand-mixer, whip 5/8 cup (or 1 stick and 2 tablespoon) butter and coconut sugar until smooth. If using a stand-mixer mix on low speed, add one egg at a time, followed by the vanilla.

  • Slowly add the dry ingredients to your batter (about ¼ cup at a time). Once well combined, finally, slowly add you apple cider until you have a nice, even batter.

  • Transfer batter to a gallon-size Ziploc bag, cut a ½ inch to 1 inch hole in the corner, and pipe the batter into the prepared donut mold.  Bake donuts for 15 minutes.

  • While donuts are cooking, prepare the cinnamon sugar topping. Combine the remaining ½ cup of sugar (white or maple) and teaspoon of cinnamon in a shallow bowl and mix.

  • Remove donuts from oven. Allow to cool for 5-10 minutes on a wire baking rack.

  • Melt remaining 2 tablespoons of butter. Brush donuts with butter and dredge/dust/sprinkle donuts with cinnamon sugar.

  • Enjoy warm with a cup of coffee or your favorite hot cider!
