baked buffalo cauliflower
Ingredients:
1 medium head of cauliflower
1/3 c garbanzo bean flour (I have used other GF flours, but this is my favorite)
1/3 c water
½ tsp garlic powder
A dash of salt and pepper
1/3 – 1/2 c your favorite buffalo sauce (if using hot sauce such as Frank’s, add a tablespoon of melted butter)
Instructions:
Preheat oven to 450 degrees.
Line a large baking sheet/pan with parchment paper or non-stick foil.
Core cauliflower and cut into bite size pieces.
In a large bowl, add flour, water, garlic powder, salt and pepper and whisk to combine (this should create a very thin, pancake-like batter – If too thin, add a little flour. If too thick, at a little water).
Add cauliflower to the batter and toss until well coated.
Using a slotted spoon, transfer cauliflower to baking sheet/pan (try not to over crowd to be sure pieces can crisp on all sides).
Place in oven and bake for 20 minutes.
Remove cauliflower from oven and place baked bites into a large bowl (breaking apart any clusters that may have formed).
Pour buffalo sauce over cauliflower and toss to coat.
Transfer coated cauliflower back to baking sheet/pan and bake for another 10-15 minutes.
Remove from oven and enjoy!
Tips:
For a large head of cauliflower, increase flour and water proportions to ½ c each.
Serve with your favorite ranch or blue cheese dressing/dip.
Use as a meat alternative to make buffalo cauliflower tacos – add crumbled blue cheese and shaved carrots and celery.
Try as a pizza topping (substitute for buffalo chicken)!
