apple, date & walnut chicken salad

Ingredients:

  • 1 ½ c chicken (boiled, grilled or rotisserie) cubed

  • 3-4 pitted dates (chopped)

  • 3 tbsp chopped walnuts

  • ¼ c green apple (peeled and cubed)

  • 3-4 tbsp mayonnaise

  • 1 tsp Dijon mustard

  • ¼ tsp onion powder

  • ¼ tsp Himalayan sea salt

  • ¼ tsp ground pepper

Instructions:

  • Combine mayonnaise, mustard and spices. Whisk until smooth.

  • In a large bowl, add chicken, dates, apple and walnuts. Top with mayonnaise mixture and gently fold until ingredients are evenly incorporated.

  • Serve over salad or on a fresh croissant!

Tips:

  • Rotisserie chicken inherently adds more flavor as it likely been salted or brined.

  • Substitute apples and dates for celery and onion (green or sweet) for a savory alternative.

  • Serve over this Shaved Brussels Sprouts salad!
