Honey Ricotta Pistachio Dip
Ingredients:
1 c ricotta cheese (low moisture)
1 c (or 8 oz) softened cream cheese
1/2 c dried figs (diced)
1/4 shelled pistachios (roasted and salted)
a pinch of salt
2 tbsp honey (and more for drizzling
Instructions:
Combine ricotta, cream cheese, honey and salt in a large bowl. Beat together until smooth. Add more honey or salt to taste. Add figs and gently stir.
Transfer mixture to a serving dish and spread with a spatula (just enough to make an even layer).
Sprinkle with pistachios and drizzle top with extra honey.
Serve with crackers or medallions of fresh bread.

Tips:
Refrigerate for 20 minutes before serving for a slightly firmer texture.
Substitute figs for your favorite fried fruit.
