Honey Ricotta Pistachio Dip

Ingredients:

  • 1 c ricotta cheese (low moisture)

  • 1 c (or 8 oz) softened cream cheese

  • 1/2 c dried figs (diced)

  • 1/4 shelled pistachios (roasted and salted)

  • a pinch of salt

  • 2 tbsp honey (and more for drizzling

Instructions:

  • Combine ricotta, cream cheese, honey and salt in a large bowl. Beat together until smooth. Add more honey or salt to taste. Add figs and gently stir.

  • Transfer mixture to a serving dish and spread with a spatula (just enough to make an even layer).

  • Sprinkle with pistachios and drizzle top with extra honey.

  • Serve with crackers or medallions of fresh bread.

  • Enjoy!

Tips:

  • Refrigerate for 20 minutes before serving for a slightly firmer texture.

  • Substitute figs for your favorite fried fruit.
